Nothing says winter like a warming soup and chances are you already have all of the ingredients at home to pull this one out of your hat! Homemade tomato soup and a cheese toastie has got to be my favourite “Tight Ass Tracey” Sunday night quickies – I love the fact that it can serve a family of 4 for under 10 bucks and as a bonus, it freezes well if you double or triple the recipe to save for another time! So here we go with the recipe!
Ingredients
- 1 onion, diced
- 2 celery sticks, diced
- 1 garlic clove, diced
- Thyme
- dried Basil
- Olive oil
- 2 cans of tinned tomato
- 500ml chicken or veggie stock
- pinch of sugar
- 1/4 cup cream or milk (optional)
- salt & pepper to taste
Method
- If you have a food processor, you can skip the dicing of the first 3 ingredients and whack them in with the thyme and basil for a short blitz until they’re diced finely
- Fry it all off in olive oil until soft – l use my Crumble.co cast iron dutch over to do this – for fast and even heating
- Add tinned tomatoes and stock
- Bring to the boil then reduce the heat and simmer for 30 minutes
- Remove from heat and allow to cool
- Puree with a food processor or stick blender
- Add cream or milk (optional)
- Season to taste
- Serve with a cheese toastie…. Perfection!
