Fave Low-Sugar Banana Bread

This banana bread recipe is an absolute winner because not only is it super easy to make, it’s low in sugar but the kids can’t tell! Better still, it’s perfect for freezing in portions and adding to school lunches.

 

Ingredients

Make 12 slices

  • 130g unsalted butter, softened
  • 3 over-ripe bananas, mashed
  • 100g – 150g caster sugar
  • 2 eggs
  • 240g plain flour (spelt, wholemeal or gluten-free flour also work)
  • 1tsp baking powder
  • 1tsp bicarbonate of soda
  • 1pinch salt 
  • 100g yoghurt, vanilla or greek (coconut yoghurt also works)
  • 2tsp natural vanilla extract
  • 100g frozen blueberries (optional)

 

Method

  1. Preheat oven to 180 degrees.
  2. Mix all wet ingredients with an electric mixer until smooth.
  3. Add dry ingredients and stir through until combined.
  4. Fold in blueberries.
  5. Line a loaf tin and pour in the mixture.
  6. Cook for 55mins – 1 hour (or until risen and nicely browned).
  7. Remove from the oven and cool in the tin for 10 minutes before lifting out onto a cooling rack.
  8. Eat warm or cool and store in an airtight container.
