Decorated Cookies for Easter

EASTER! Are you kidding? I’m still finding snap lock bags of leftover ham in my freezer!

If, like me, Easter has crept up on you like a creepy man in a bunny suit, here are 2x sugar-filled ways to get in the spirit!

The Express Mum’s Guide to Easter Cookies

In the Northern Hemisphere, Easter is celebrated in Spring. It is a symbol of new life, and hence all the references to eggs and chickens and cute baby bunnies. Originally I set out to find the perfect cookie recipe for cutouts to decorate, but it all seemed so labour intensive and ain’t nobody got time for that! So, whilst rummaging through the pantry for a late-night snack, I discovered- Milk Arrowroots. Voila! The perfect egg shape for decorating.

Arrowroot Biscuit Decorating!

Here is what you need:

  • A packet of Milk Arrowroot biscuits
  • A packet of Royal Icing mix (available at Woolies)
  • Food colouring
  • Sprinkles
  • Edible glitter and anything else you wish to decorate with

 

Method

1.Royal Icing is made up of Icing mixture, egg white and lemon juice. If you intend to use a piping bag, you want the consistency like stiff peaks. Too runny and you will flood your biscuits, too thick and the icing will be dry and unspreadable.

2. If you can’t find the packet mix in the supermarket, try this recipe from taste.com.au.

3. Split the icing into bowls and add a couple of drops of colouring to the desired shade.

4. Go nuts decorating as you please. Allow the biscuits to set for an hour or so before consuming on/in or close to an area where children can burn off the sugar hit!
